Once, long back, a distant relative of our visited our place.Whereas I was a little kid back did and have lost most of the memories of their stay, this was something which I managed to remember.She prepared this wonder omelette which was totally new to our taste – sprinkled with roasted spices. I recreated the dish, in the Spiced Omelette recipe mentioned earlier and I also did manage to innovate some unusual stuff on top of that.Taking cue from the Achari Murg, I added some Panch phoron and pickled oil to the omelette and it was excellent.
Its a bit rustic, roasted slightly on the higher side and the flavours are sensational.

Cooking and Preparation Time: 10 mins.

Ingredients:

Beaten Eggs – 2
Onion – 1 large(75-80 gms).Chopped finely.
Ginger – 1/4th inch.Crushed
Garlic – 2 cloves.crushed.
Tomato -1/4 of a medium sized tomato.Cut into small pieces.
Green Chili – 2.Cut into small pieces.
Pickled Oil – 1 tsp
Mustard Oil – 3 tsp
Salt – To taste

Spices

Cumin Seeds – 1 tsp
Panch Phoron – 1 tsp
Coriander Powder – 1/2 tsp
Cumin Powder – 1/2 tsp
Turmeric Powder – 1 tsp
Dry Red Chilli Powder – 1/2 tsp

Procedure:
Preparing the spiced mix:

Heat 2 tbsp of mustard oil in a pan.
Once the oil gets hot, add the cumin seeds and panch phoran.
When the powerful fragnance of the spices evolve, add the onion slices.
Stir the mixture until the onion pieces are brown then add the ginger and garlic.
After about a minute, and the tomato slices, pickled oil, green chilies  and salt to taste.
Stir until the mixture is well cooked.
Keep aside.

Preparing the Omelette:

Make a batter with the eggs, and sprinkle salt over it and keep aside.
Add the spiced mix to the batter and stir thoroughly.
Heat 2 tbsp of mustard oil in the same pan and add the egg batter mixed with the spiced mix.
Turn the omelette and fry the other side, once the side over the pan is brownish yellow.
