Cooking a Flavoured Fried Rice is pretty simple.All you need is some really good Basmati rice, cooked to perfection and a right mix of the ingredients, you plan to flavour the rice with. Today I decided to pair the fried capsicums with onion and finish that off with a little amount of ghee.


Preparation Time(Excludes Time Required for 90% Cooked Rice): 15 mins
Cooking Time: 25 mins. Under medium-high to low heat

Serves: 2-3

Ingredients:

  • Basmati Rice: 200 gms
  • Green Capsicum: 15  gms.Cut into very small pieces.
  • Yellow Capsicum: 15  gms.Cut into very small pieces.
  • Red Capsicum: 15  gms.Cut into very small pieces.
  • Onion: 1 50 gms onion.Cut into very small pieces.
  • Ginger: 10 gms.
  • Vinegar: 2 tbsp
  • Black Pepper: 4-5 cloves. Crushed into fine pieces.
  • Vegetable Oil:5 tbsp
  • Melted Ghee: 2 tbsp
  • Salt:To taste
  • Sugar: 2 tbsp

Procedure:

  • Heat 4 tbsp of vegetable oil in a wok or kadai.
  • Once the oil gets hot, add the ginger pieces.
  • When the smell of the ginger evolves, add the sliced onion.
  • After 3-4 mins, add all of the capsicum slices.
  • Stir fry the mixture for 6-8 mins and then add the vinegar and cook for 2 mins. 
  • Turn the heat to low.
  • Then add 1/4 th of the portion of the cooked rice.
  • Mix the ingredients thoroughly for 4-5 mins. 
  • Then add 1/2 of the remaining cooked rice.Sprinkle the sugar onto the rice.
  • Mix for another 5-6 mins.
  • Add the remaining portion of the rice and cook for 5 mins.
  • When the cooking is done, drizzle 2 tbsp of ghee.

Serve hot with Chicken recipes.
