Chicken Spice Mix Curry

Usually I refrain from using the myriads of spice mixes available in the market.But for the sake of experimenting I prepared a simple Chicken curry, with all the usual ingredients and this “mughlai spice mix”.
The result was a reddish dense gravy which blended well with the steamed rice.

Ingredients:

  • Chicken: 750 gms
  • Potato: One large, divided into two halves.
  • Onion: 120 gms.
  • Ginger-Garlic paste: 3 tbsp
  • Tomato: 1 medium sized. Blended
  • Green Chilies: 3-4.Slit.
  • Salt: to taste
  • Mughlai Spice Mix:One whole portion
  • Vegetable Oil:4-5 tbsp

Procedure:

  • Heat the vegetable oil in a kadai.
  • When the olil gets hot, add the ginger garlic paste.
  • After half a min, add the onion slices.
  • Fry the onion slices till the colour turns brown.
  • Then add the tomato paste, green chilies and the spice mix
  • Under low heat, ensure that that the ingredients mix thoroughly.
  • Then add the chicken.
  • Increase the heat to medium-high.
  • Stir the ingredients for 20-25 mins under the heat so that the chicken pieces are coated with the mixture.
  • Then add a little amount(half cup) of warm water to the curry and put a lid over the kadai.
  • Let the ingredients simmer for sometime(5-6 mins), after which stir the ingredients and put the lid back. Add more water in case required.Repeat this process until the chicken is soft and tender.
  • Serve with steamed rice.
