It was a Saturday and it had rained the entire afternoon resulting in a torridly humid evening.There was a humid wind blowing throughout the evening and the overcast conditions did not help the cause.A finely chilled bottle of beer and with this chicken as a starter offered all the help that we needed.This was prepared with honey and had a lovely sweet tinge in it.

Preparation Time: 10 mins
Cooking Time: 30 mins
Ingredients:
- Boneless Chicken: 300 gms. Diced into around 25 pcs.
- Cornflour: 4 tbsp.Heaped.
- Black Pepper Powder: 1/2 tsp
- White Pepper Powder: 1/2 tsp
- Beaten Egg: Half.
- Salt: To taste
- Vegetable Oil for deep frying
Procedure:
- Mix all the above ingredients together and keep aside for 15 mins.
- Heat a significant amount of vegetable oil in a wok.
- Once the oil gets nice and hot, add the chicken pieces.
- Fry the chicken till the colour turns yellowish brown.
- Once fried, let the chicken pieces rest on a tissue so that the excess oil gets strained.
For the sauce
- The Fried Chicken Cubes
- Black Pepper Powder – 1/2 tsp
- White Pepper Powder – 1/2 tsp
- Vegetable Oil – 3 tbsp
- Garlic – 6-8 cloves.Finely Chopped.
- Ginger – 1/4th ich.Finely Chopped.
- Dry Red Chili – 2.Deseeded
- Green Chilies – 4.Cut into small pieces
- Soya Sauce – 2 tsp
- Vinegar – 1 tsp
- Green Chili Sauce – 2 tsp
- Oyster Sauce – 1 tsp
- Honey – 2 tbsp
- Salt – To taste
Procedure:
- Heat the vegetable oil in a wok
- Once the oil get hot, add the – black pepper powder, white pepper powder, ginger, garlic, green chilies, dry red chilies – all at the same time.
- Once an invigorating smell evolves, add the soya sauce, vinegar, green chili sauce and oyster sauce.
- After about two minutes, add the fried chicken pieces
- Stir fry the enire mixture for 3-4 mins under medium heat.
- Then spread 2 tbsp of honey over the mixture.
- Mix the ingredients thoroughly.
- Then add salt to taste and very little amount of water(less than 1/2 cup)
- Cook covered for 10 mins until the chicken pieces become so tender that they melt in the mouth.
Serve with Fried rice/Chowmein.
