I had gone for a drive with the wife and while returning back we hopped into the super market. We bough a few colours of capsicum, some paneer, some wafer biscuits and returned back home. The wife improvised an ice-cream with the wafer biscuit and I decided to prepare Chili Paneer and Parantga.
Paneer is to the vegeterians what Chicken is to the non-vegs.I know it sounds cliche but we decided to go vegetarian this Friday.

Preparation Time: 15 mins
Cooking Time: 30 mins

Serves: 2-3

Ingredients:

  • Paneer: 200 gms.Cut into cubes.
  • Capsicum: 75 gms sized. Cut into medium pieces.
  • Onion: 75 gms .Cut into medium sized pieces.
  • Garlic:8-10 cloves.Cut into small pieces
  • Green Chili: 4-5.Cut into small pieces
  • Dry Red Chili: 2
  • Black Pepper: 7-8 pieces.Crushed
  • Ajinomoto:1/2 tsp
  • Sugar:1 tbsp
  • Salt: To taste
  • Vinegar: 1 tbsp
  • Dark Soya Sauce: 1 tbsp
  • Corn flour: 3 tbsp
  • Beaten Egg: 1. In case you are purely veg, then coat the paneer pieces with corn flour directly.
  • Vegetable Oil: 4 tbsp for frying the paneer, 2 tbsp for the stir-fry.

Procedure:

  • Dip the paneer pieces in the beaten egg.
  • Then coat the pieces with corn flour.
  • Heat 4tbsp of vegetable oil.
  • Once the vegetable gets hot, add the coated paneer pieces and fry until the pieces turn reddish brown.
  • After all the paneer pieces are fried, heat 2 tbsp of vegetable oil.
  • Add the cut green chilies,dry red chili,crushed black pepper,garlic and ajinomoto
  • When the aroma of these ingredients evolve, add the green capsicum pieces.
  • Fry for 2-3 mins under medium-high heat.
  • Then add the onion pieces.
  • Fry for a further 2-3 mins.
  • Then add the vinegar, salt, dark soya sauce and sugar.
  • Stir for 2 mins. 
  • Then add the fried paneer pieces.
  • Cook for 10 mins.

Then remove the ingredients from the flame and serve hot.
