| Dry Pepper Garlic Chicken |

ting a piece on this blog had become utterly difficult.
So, any time that I find on the calendar going forward from now, is going to be totally dedicated to this blog because there are a number of posts eagerly waiting to come up and meet you folks!
Over the past month, I had experimented with quite a few Chinese recipes, ones of the Indian Chinese types.A friend of mine and I, shared the following stuff over some beer talk sometime back.
It was hot, spicy and one that seconded the beer pristinely.

Serves:2
Marination Time: 2 hrs
Preparation Time: 15 mins
Cooking Time: 30-35 mins.
Ingredients:
For Marination:
- Chicken: 200 gms.Cut into small cubes.
- Vinegar: 3 tbsp
- Salt: To taste
For the batter:
- Marinated Chicken Pieces
- Egg: Half a beaten egg
- Black Pepper: 1/2 tsp.Powdered
- White Pepper: 1/2 tsp.Powdered
- Cornflour: 5-6 tbsp.
For the sauce:
- Fried Chicken Cubes
- Garlic: 8-10 cloves.Chopped.
- Dark Soya Sauce: 3 tsp
- Green Chili Sauce: 2 tsp
- Black Pepper:1 tsp
- White Pepper:1 tsp
- Ajinomoto: Traces
- Rest of the beaten egg
- Vegetable Oil:
- 6 tbsp for deep frying the chicken pieces
- 3 tbsp for the sauce
Procedure:
Marination:
- Soak the chicken pieces in vinegar and some amount of salt to taste for a couple of hours.
- Frying the Chicken:
- Beat half of an egg (keep the remaning half beaten egg aside – it will be required later) and mix black pepper powder, white pepper powder, traces of salt till the batter acquires a uniform texture.
- Heat 6 tbsp of vegetable oil in a wok.
- Once the oil gets hot, dip the chicken pieces in the batter and fry them in the hot oil, under low heat – till the chicken pieces get coated light brownish.
- Rest the fried pieces on a dry tissue to soak in the excess oil.
Preparing the sauce:
- Heat 3 tbsp of vegetable oil in a wok.
- Once the oil gets hot, add the black pepper, white pepper, ajinomoto and finely chopped garlic pieces.
- When the flavour of garlic evolves, add the soya sauce and green chili sauce.
- Stir for a maximum of 2 mins
- Then add the remaining half of the beaten egg.
- Stir for a minute, then add the fried chicken cubes.
- Let the ingredients mix uniformly well.
- Add traces(6-8 tbsp) of water and cook for 10-12 mins under low heat.
- At the end of which, increase the heat and ensure that all moisture gets vapourized.
Serve hot!
