I prepared this one for my uncle who had come to our place for a few days and was leaving the next day.Office work was light that day and after I had come back home the dish kept me pretty much occupied for the rest of the evening. I had prepared this Pulao on a Dum, and that enhanced the flavours even more.

Serves: 3-4

Preparation Time: 30 mins
Cooking  Time: 1 hr

High Level Procedure

  • Prepare a Prawn Curry
  • Prepare 80% Boiled Rice and let us dry in the open air
  • Layer the Prawns from the curry with the rice on a dum for 30 mins.

Preparing the prawn curry
Ingredients:

  • Prawn: 400 gms of Bagda Chingri.Coat the chingri with 1 tsp turmeric powder and salt according to taste. Keep aside for 12-14 mins.Then fry the prawn in vegetable oil and let them rest on a tissue.Onion:2 medium sized(100 gms).Made into a fine paste
  • Ginger Paste:1 tbsp
  • Garlic Paste:1 tbsp
  • Tomato: 1 medium sized. Made into a fine paste.
  • Vegetable Oil: 4 tbsp
  • Sugar:1 tbsp
  • Salt: To taste
  • Whole Spices
  • Green Cardamon:3-4
  • Cinnamon Stick:One 1 inch stick.
  • Cloves:3-4
  • Powdered Spices
  • Turmeric Powder:1 tsp for coating the 
  • Coriander Powder:1.5 tsp

Procedure:

  • Heat the vegetable oil in a kadai.
  • Once the oil gets hot, add the whole spices.
  • When the aroma of  the whole spices evolve, add the ginger-garlic paste.
  • Turn the heat to low and stir the ginger-garlic paste for a minute.
  • Then add the onion paste.
  • The onion paste adds moisture to the kadai.So increase the heat to medium and mix the ingredients till the point the onion turns brownish in colour.
  • Then add the  tomato paste,powdered spices,sugar and salt to taste.
  • After stirring for 8-10 mins under medium heat, add the fried prawns.
  • Turn the heat to low and let the prawns cook for 15 mins.
  • Remove the curry and keep it aside.

Layering the Prawn and Rice:
Ingredients:

  • Fried Brown Onion Slices:7-8 tbsp
  • Melted Ghee: 4 tbsp
  • Parboiled Rice
  • Prawn Curry

Procedure:

  • Put a layer of the rice on a handi.
  • Add some of the prawns.
  • Sprinkle some melted ghee and fried brown onions.
  • Repeat the process until the rice and prawns are exhausted.
  • Cover the handi and seal it.
  • Cook it over low fire for 40 mins.

Remove the cover and serve hot!
