I love eggs in any form – in curries, fried as in omelettes,poached eggs, bhurjis or even half boiled eggs.
Infact school day breakfasts were usually Boiled rice, dal and alu bhaja or boiled eggs. This is a twist to the regular omelette.
Ingredients:
- Eggs: 2
- Onion: 1 large.Cut into longitudinal spices.
- Ginger: A 1/4th inch piece.crushed.
- Garlic: 2 cloves.Crushed.
- Tomato: 1 medium sized.
- Coriander Leaves: A handful.
- Green Chillies: 2 Cut into small pieces.
- Vegetable Oil: 2 + 2 tbsp
- Salt: To taste.
Powdered Spices:
- Coriander Powder: 1 tsp
- Turmeric Powder: 1 tsp
- Dry Red Chilli Powder: 1/2 tsp
Whole Spices:
- Cumin Seeds: 1 tsp
Procedure:
Preparing the spiced mix:
- Heat 2 tbsp of vegetable oil in a pan.
- Once the oil gets hot, add the cumin seeds.
- The cumin seeds will start to sputter after sometime, then add all the ingredients excepting the Egg batter and
- powdered spices.
- Stir the mixture until the onion pieces are brown and the tomato juice has mixed uniformly with the mixture.
- Then add the powdered spices.
- The mixture should be ready in another minute.Keep it aside.
Preparing the Omelette:
- Make a batter with the eggs, and sprinkle salt over it and keep aside.
- Add the spiced mix to the batter and stir thoroughly.
- Heat 2 tbsp of vegetable oil in the same pan and add the egg batter mixed with the spiced mix.
- Turn the omelette and fry the other side, once the side over the pan is brownish yellow.
- Roll up the omelette and serve.
