Onion Based Fried Rice with Bengali Butter Chicken |
May has been very hot this year.
But thanks to the rains, there were times when the night temperatures remained bearable. Though the rain resulted in significant amount of overcast and humid conditions, but the fearsome heat has been kept away.I have been having a very busy time oflate – so much so that whereas I have been able to pry some time out for the kitchen, but not enough for the writing.
There are some recipes which were prepared during April, but didnot find the light of blog until now.
Heres an Onion based fried rice, which we used to frequently have in our home.
Preparation Time: 30 mins
Cooking Time: 25-30 mins
Ingredients:
- Basmati Rice: 250 gms.Keep the rice soaked in water for 30 mins.
- Onion: 50 gms
- Ginger: 1/4 th inch.Finely crushed.
- Carrot: 50 gms.Cut into thin slices
- Capsicum: 50 gms.Cut into thin slices
- Beans: 50 gms.Cut into small pieces.
- Cashew : 20 gms
- Raisins: 10 gms
- Sugar: 1.5 tbsp
- Salt: To taste
- Vegetable Oil: 4 tbsp
- Melted Ghee: 2 tbsp. To be added at the end.
Procedure:
- Heat water in a pot.
- Once the water comes to a rolling boil, add the soaked rice.
- Boil the rice for 5-7 mins.
- Then drain the water and let the rice dry in the open.
- Heat 4 tbsp of vegetable oil in a wok.
- Once the oil gets hot, add the sliced onion and ginger.
- As the onion slices start to turn brown, add all the rest of the vegetables – carrot, capsicum and beans.
- Stir and fry the vegetables until the mixture is uniform.
- Then add the boiled rice.
- Under low heat, stir the mixture for 10-12 mins.Add the sugar and salt.
The fried rice should be ready.
