I have thought of publishing “The Sunday Post” from this week. Especially when the days are rainy and cool and I have thought the post to be more of a seasonal kind.  Actually this weekend was an extended one – and I was able to indulge myself a lot in the kitchen and created quite a few delights.
(i) Macher Jhuri (ii) Chili Paneer (iii)Capsicum Fried Rice (iv)Sorser Tel-e Chicken Curry (v) Stir Fried Capsicum Chicken.

Let me start with the last one, which happened to be also, one of the simplest recipes to prepare and it didnot even take me 30 mins. The key to this recipe is really thin sliced chicken pieces.In my case I slit a 150 gms chicken into 25 pieces.Its that thin.

Preparation Time:10 mins
Cooking Time: 20-25 mins.

Serves: 2

Goes Best With: Drinks

Ingredients:

  • Yellow Capsicum: 25 gms.Slit length wise into thin strips.Cut out a slice from a bigger capsicum proportionately.
  • Green Capsicum:25 gms. Same as above.
  • Red Capsicum:25 gms. Same as above.
  • Garlic:10 cloves. Cut into thin slices.
  • Black Pepper:8-10.Crushed.
  • Green Chili: 2.Cut into small pieces.
  • Vinegar:2 tbsp
  • Vegetable Oil:5-6 tbsp for frying the chicken, 2 tbsp for the stir-fry
  • Sugar: 1 tbsp
  • Salt:To taste
  • Chicken Pieces
  • Cornflour:2 tbsp.Heaped
  • Beaten Egg:1

Procedure:

  • Wash the chicken pieces and coat the pieces with salt.
  • Beat 1 egg and keep it aside.
  • Heat 5-6 tbsp of vegetable oil in a pan.
  • Once the oil gets hot, dip the chicken pieces, first in beaten egg and then in the cornflour and fry until the pieces turn yellowish brown.Rest the chicken pieces in a piece of tissue to soak in the excess oil.
  • Once the chicken pieces have been fried,stir fry the ingredients as follows:
  • Heat 2 tbsp of vegetable oil. Note: In case there is left over oil, then you may use that.
  • Add the sliced garlic,black pepper and green chili to it.
  • Once the aroma of the garlic evolves, add the capsicum.
  • Add salt and sugar to the mixture.
  • Stir fry the ingredients for 5-6 mins under medium heat.
  • Then add the vinegar to introduce a little sourness to the dish.
  • Also add the fried chicken pieces.
  • Cook for a further 8-10 mins, until there is a uniform taste in the dish.

Serve hot, with drinks.
